Authentic Neapolitan pasta and pizza

Riccardo comes from a family of Neapolitan chefs. He was head chef in several 5-star hotels. When he decided to open Pulcinella with his wife Amanda, head of the dining room, it was clear to them that it would be in the neighbourhood where they settled back in 2012 and which reminded them in some ways of their native Naples.

At Pulcinella you will taste authentic traditional Neapolitan cuisine, made with ingredients brought directly from the Campania region (Naples, Sorrento,…): Caputo flour, fior di latte, Torrente tomatoes, sausages, salsiccia napoletana, cigoli, friarielli, as well as local wines and homemade desserts.

For cooking, a stone oven was brought by ship expressly from Naples. The oven cooks the pizzas according to the rules: at 400° for just 90 seconds. The dough, the main ingredient, is thin and ferments for at least 48 hours.
